Most of my memories of Thanksgiving are a tryptophan–wine induced jumble of turkey meat, pumpkin pies and trying to eat as much mashed potatoes and gravy as humanly possible. As a kid they included sparkling grape juice and old people like grandparents or great aunts and uncles. There was a lot of polite (and incredibly boring) table talk where I would repeat the same answers to questions as every other holiday– school is good" and I am blank years old now" blah blah blah. So instead I would focus on how many different foods I could fit onto one forkful at one time to get the most epic turkey dinner bite in history. As an adult, my Thanksgivings are much more enjoyable with just as much bountiful food but also wine, good company and conversation where people almost never ask how old I am. One of my favourite Thanksgivings was when I lived in Mexico for a semester during college. We invited our friends and neighbours over to show them what a Thanksgiving in Canada consisted of. Me and my lovely friend Aly spent a lot of time sourcing out a supermarket that sold frozen turkeys and trying to buy pumpkins without knowing what they were called because it was before Google Translate days. We spent all day Thanksgiving making the turkey, a bunch of side dishes and 2 pumpkin pies from scratch to feed everyone. We drank bottles of Sol with limes throughout the day to keep us going until it was finally ready to serve about 2 hours late, but that was perfect because everything is expected late in Mexico. There was much wine with dinner and even more tequila afterwards. For a reason I don't remember, all the men were wearing bras by the end (indicative of a very good time in college) and the party went into the early hours of the morning.

To quote Andy Bernard from The Office (aka the best show of all time), I wish there was a way to know you're in the good old days before you've actually left them." I've had so many amazing times with incredible people, and a ton of good old days" with many more to come I'm sure. That's really what Thanksgiving is about. Being thankful for all you have and the experiences of this sometimes weird, sometimes fun, and sometimes dark thing called life. Sometimes giving thanks feels like all the deep emotions at once for me–love, happiness, gratitude, and sadness for the times gone, but not in a bad way, just in a way where you realize how short life is so we must try enjoy as much as we can. 

So Thanksgiving is about gratitude. But it's also about pumpkin! We don't even think about pumpkin for 10 months of the year but during Fall, it's the belle of the ball! For the last 6 weeks, my instagram has been consumed with pumpkin related food and pumpkins themselves. Apparently they come in all colours now! Like baby blue and white... when did this happen?!?!? Are they real? Or are they ghost pumpkins?

Although Thanksgiving here in Canada is in October, I thought I'd dedicate this dish to America. Because right now, with everything that has happened lately, they need some extra love. Which could mean extra pumpkin. And definitely means comfort food which is always bread.

PUMPKIN CHOCOLATE BREAD PUDDING

makes one 9 x 13" baking dish || prep time: 20 minutes || bake time: 25 - 35 minutes

i n g r e d i e n t s :

  • 1 loaf of white pullman/sandwich style bread, sliced. (between 12-14 slices, equal to approx. 10 cups when cubed)
  • 425 grams of canned pumpkin
  • 1 cup of coconut milk (full fat)
  • 1/2 cup brown sugar + 2 tbsp (for topping before going into oven)
  • 3/4 cup semi sweet chocolate chips
  • 1.5 tsp cinnamon
  • 1 tsp fresh nutmeg
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp sea salt
  • powdered sugar (for dusting)
  • fresh whipped cream (for topping), optional. Substitute coconut based whipped topping or coconut based ice cream to keep vegan.

m e t h o d :

  1. Make bread stale. It must be stale to make bread pudding so it can absorb liquid better. You can leave it out of the bag for a day or two or you can bake it like I did. To make stale by baking, place oven rack on the top shelf and preheat oven to 375°F. Lay bread on baking sheet. Bake for 5 minutes on each side or until golden and toast-like.  
  2. Turn oven down to 350°F. Grease baking dish with butter or coconut oil. Chop up stale bread into 1-inch cubes and place into baking dish. In a blender, place canned pumpkin, coconut milk, 1/2 cup brown sugar, spices and salt. Blend until a smooth puree. Pour over bread cubes and toss until bread is fully covered. Add chocolate chips and fold through bread mixture. 
  3. Sprinkle the 2 tbsp brown sugar over top the bread pudding evenly. This will help caramelize the top. 
  4. Bake in oven until the top is slightly brown and crisp, between 25-35 minutes. Let bread pudding cool for 10 minutes. Top with powdered sugar if desired. Cut and serve with ice cream, custard or lightly whipped cream (my favourite because it cuts the sweetness and balances the dish). I use a bit of natural vanilla extract and just a bit of maple syrup. 

Keep in air tight container in the fridge and reheat in the oven for 8 - 10 minutes before reserving.

FOREVER PEACHES || Cream + Honey

There were a ton of peaches in my kitchen when Ontario peach season began because I can't resist fuzzy orange fruit or a good deal. I began using peaches in everything for indulging purposes and to avoid waste. While out for dinner one night–relentlessly naming all the peach dishes I've  been making (I'm sorry friends), it was suggested I should post some ways to utilize a large amount of peaches without getting bored of them while they're in season. I have a serious case of the “getting bored quicklies". So I am always finding ways of making things slightly different so I don't fall into an intense state of ennui or make too many impulsive decisions.

Peaches 3 ways must have diversity, of course. But always honey. Therefore, it is as follows...

1 savoury + 1 sweet + 1 drink (it's actually 2 because when you add booze, it transforms into something new (and more fun). I never said I was good at math, and peaches 3 ways just sounds better than peaches 4 ways. Nobody likes the number 4. But everyone loves 3.)

So let's do this.

1. PEACH + AVOCADO TOAST

2. ROASTED AMARETTO PEACHES + WHIPPED CREAM

You can also use half peaches as froobs! What are froobs? Well, they're fruit + boobs. You know when you're a kid and you hold things in front of your boobs that resemble them? 3 (and a half).  PEACHY BEACH GIN COCKTAIL

Gin makes everything better in my opinion. Therefore...

gin + ginger peach tea + sparkling water = light tasty cocktail you can drink at the beach or on a porch while pretending you live in the house from The Notebook with Ryan Gosling. Sigh.

The drink umbrella is important if you want to pretend you're on vacation at a swim up bar. And who doesn't want that? 


PEACHES 3 WAYS: PEACH AVOCADO TOAST, ROASTED AMARETTO PEACHES, + PEACH GINGER ICED TEA

 

PEACH + AVOCADO TOAST (makes 2 toasts)

i n g r e d i e n t s :

  • 1 peach, sliced
  • 1/2 avocado, sliced
  • 2 slices of toast
  • 3 tbsp goat cheese
  • 1/4 lemon, juiced
  • 1/2 lemon, zested
  • 1/2 tsp extra virgin olive oil
  • 2-3 basil leaves, ripped or chopped into small pieces
  • honey, for drizzling
  • salt and pepper to taste

m e t h o d :

  1. Add goat cheese to a bowl and whip/fluff with a fork. Add lemon juice, half the lemon zest, olive oil and salt and pepper to taste. Whip together with fork. 
  2. Spread whipped goat cheese mixture on to toasts. Place sliced peach and avocado to toasts, alternating between the two. Sprinkle basil on top plus more salt and pepper if desired. Drizzle honey lightly on top. 

AMARETTO ROASTED PEACHES + FRESH WHIPPED CREAM (makes 2 servings)

recipe slightly adapted from Buvette: The Pleasure of Good Food

i n g r e d i e n t s :

  • 2 peaches, halved with pits removed
  • 2 tbsp of amaretto
  • 4 tbsp coconut sugar (or any sugar)
  • 1 cup of freshly whipped cream
  • 2 tbsp honey, for drizzling
  • cinnamon, for sprinkling
  • 2-3 tbsp toasted pecans, roughly chopped or crushed
  • a few mint leaves, chopped or torn

m e t h o d :

  1. Preheat broiler to high
  2.  Place peaches, flesh side up in a skillet. Turn on burner to high. Pour amaretto over the peaches and sprinkle each half with a tbsp of coconut sugar. Place skillet on the burner to burn off the alcohol which will take about 3 minutes. Careful not to burn.
  3. Place skillet into oven and broil until peaches are browned, about 5 - 10 minutes.
  4. Serve warm (or cool) and top with fresh whipped cream, sprinkle of cinnamon, drizzled honey, toasted pecans and mint leaves.

PEACH HONEY GINGER ICED TEA (makes 1 litre/large mason jar)

i n g r e d i e n t s :

  • 1 litre water
  • 1/2 inch piece fresh ginger, grated
  • 2 bags of green tea (or any tea)
  • 2 peaches, chopped + extra slices for each glass)
  • 2 tbsp of honey (plus more if desired)
  • mint sprigs, for garnish

m e t h o d : 

  1. Boil water. Place tea bags + ginger in large measuring cup. Pour 1 litre of water over top the tea bags. Add chopped peaches and honey to tea water. Stir until honey is dissolved. Taste and add more honey if desired. Leave in tea bags for 15 to 20 minutes and then remove. Muddle Peaches. Refrigerate mixture until cool. Strain mixture into mason jar or jug. 
  2. Add ice to glasses. Place sliced peaches into glass if using.
  3. Pour peach tea over ice. Bruise mint sprig to release oils and add to glass with a straw.

BEACHY PEACH COCKTAIL (makes 1 cocktail)

  • peach honey ginger iced tea (see above)
  • 1.5 oz gin (bourbon or vodka work too!)
  • 2 oz. sparkling water
  • 4 slices of peach (for glass if desired)
  • mint sprig, for garnish

m e t h o d :

  1. Add ice to glasses. Place sliced peaches into glass if using. Add booze of choice. 
  2. Add peach iced tea to glass until one inch or less from the top. Top with sparkling. Bruise mint sprig to release oils and add to glass with a straw and drink umbrella. 
  3. Gaze at the water, sky or a friendly face while drinking and sighing. 

BANOFFEE BIRTHDAY PIE

This pie feels like humble celebrations. Only a few ingredients and finished with a billowing whipped cream–it is perfect for any day of festivities.

It was my best friend's birthday this week and I am sure we've known each other for many life times. We help balance one another in times times of need and madness. We all go a little crazy sometimes. And it's okay. Serendipitous coincidences happen to us on a regular basis. Without knowing–we will make the exact same dish for dinner, have the same idea or thought, apply for the same job, end up at the same cafes or bars without plans and we live in a city of millions of people. Even existential life crises have arose at the same time... Although it's better when they don't because it's a lot of obscure universal conversations with alternate crying. At least we take turns, I guess? 

I'm always excited to celebrate birthdays of the people I love–it makes me happy thinking of how they have changed my life and how blessed I am to know them. So this year a pie with some thick dulce de leche and a massive cloud of whipped cream was in order. I gave it to her alongside a bottle of tequila and a large green juice. Because it's all about balance, right?!

I love how easy it is to make dulce de leche from sweetened condensed milk. If you haven't done it, you are in for a massive sugar high and tooth-achey ride of your life!!!! Because I don't believe you can resist eating this straight from the can if you are human.                                                                                        If you resist, you are officially a non-human. And you should try it because all the humans are doing it, dude.

Boil the can of condensed milk in a pot of water and then like magic you peel open the top and voila! Dulce de leche! Alchemy at it's finest. Simmering time varies depending on how dark you want yours. I like mine dark. Real dark, with intense caramel notes and richness. You can make a bunch of cans at once which store in your cupboard for months. Then you have dulce de leche on hand to top over your ice cream, spread on cookies, or eat by the spoonful. Dangerous? Yes. Do I regret it? Never.

Things to know about banoffee pie:

1. Banoffee = banana + toffee".

2. It's a messy pie–gooey, sloppy and doesn't stay together very well. Kids will love it.

3. It's a classic British dessert aka pudding. 

British food is one of my favourites. Not enough people give credit to this cuisine in my opinion and I've even heard people say British food is terrible. And when they do I say,

ARE YOU F*$KING CRAZY!? Have you had an English roast dinner?! It's literally one of the most delicious things on the planet! And what about meat pies? Cornish pasties?! Ummm SCONES! HELLO! Yorkshire pudding! Scotch eggs?! F*&KING FISH AND CHIPS MOTHERFU*%ER!!!" Then they start looking scared because I'm apparently being too intense.                                                         So then I'm all, Just kidding. Ha. Ha.😬 Because it's awkward. But I wasn't kidding guys. I wasn't.

I was way too eager this time and didn't let the pie crust set in the fridge so this happened. But it's important to embrace the imperfections and messiness of life. It's also important to be patient... But that's something I'm not that good at.

BANOFFEE PIE

i n g r e d i e n t s :

  • 400 g digestive biscuits
  • 156 g butter (11 tbsp)
  • 1 can sweetened condensed milk (or 1 can of pre-made dulce de leche)
  • 3-4 ripe bananas
  • 2 cups of whipping cream
  • dark chocolate, for grating

m e t h o d :

Dulce De Leche        

*Takes 2-3 hours*  Make one or many at a time. They will keep in your cupboard for a few months.

  1. Remove label from can(s) of sweetened condensed milk. Place can on it's side in a large pot (so it doesn't bounce around and make annoying sounds while simmering for hours). Fill pot with water so that it comes 2 inches or more above the can. 
  2. Turn on the stove to high heat until the water comes to a boil. Reduce heat to medium and continue to let it simmer for 2-3 hours depending on how dark you want your dulce de leche. I let mine simmer for 2 hours and 45 minutes. *make sure to keep checking your pot and adding water so that the cans are ALWAYS covered with water, apparently they can explode if not. 
  3. Remove cans from water carefully with tongs and place on a wire rack to let cool. Do not open them while they're hot, the caramel may spurt out because still hot. I refrigerated mine overnight to get a nice thick texture when spreading it into the pie. 

Pie

  1. Use a food processor or mortar and pestle to turn digestive biscuits into fine crumbs. Place in a medium bowl.
  2. Melt butter in a saucepan over the stove on low heat. Pour butter into biscuit crumbs, 1/3 at a time while mixing until evenly distributed. 
  3. Press biscuit dough into a tart or pie pan between 9" to 11.5" in diameter. 
  4. Cover with plastic wrap and place in the fridge for at least 30 minutes to firm it up.
  5. Open dulce de leche and spread into the pie shell with a spatula or off set frosting knife.
  6. Cut bananas into even slices about 1 cm thick and place across the dulce de leche.
  7. Whip the whipping cream until thickened. Sweeten slightly if desired. I left mine plain because the dulce de leche and bananas are very sweet together so the cream helps balance the dessert.
  8. Spread on the whipped cream thickly with a spatula.
  9. Grate dark chocolate on top to amount desired. 

*Will keep in refrigerator for another day or two.
