Hygge: “(pronounced hue-gah) is a Danish word that is a feeling or mood that comes taking genuine pleasure in making ordinary, every day moments more meaningful, beautiful or special. It simply requires being present and recognizing a moment that feels so sweet, cozy, charming, special or nice that you just have to name the moment." There is not one word in the English language for hygge but it is basically a combination of coziness, happiness, familiarity, comfort, kinship, and simpleness. 

Perfect for us wintery nations, I am surprised to only hear about this concept a few months ago. I am feeling very hygge-like during these cold months, really embracing my introversion and domestic side with lots of candles, blankets and warm mugs of tea. This drink is the coziest quilt and much needed right now. I'm having sleep problems currently. My nights go something like this:                                         Read until my eyes are closing. Turn off the light and suddenly my brain is wide awake contemplating every thought that's ever happened in the universe. Lie suspended in a half dream and half conscious state for what feels like somewhere between minutes and years. Decide that time is an illusion. Fall asleep for real, have an anxious dream. Wake up at 4 am for no reason. Toss and turn. Go to the bathroom. Get hungry. Eat some crackers. Do a breathing exercise for 20 minutes that claims will make you “fall asleep within 60 seconds". Sigh loudly. Thoughts begin to float around; harmless at first but graduate to higher levels of frustration from sleep deprivation.

And then it's only 3 episodes which I binge watch and then I'm doomed to wait another 3 years!!"                                                                                “I always thought Belle from Beauty And The Beast was a strong female lead because she read books and didn't buy any of Gaston's ego-centric bullshit. But then she totally excuses all the beast's irate controlling behaviour. How is he even appealing to you Belle?! He's a dick and holding you captive! Stockholm syndrome much?! Just imagine THIS was a guy's reaction when you said no to dinner? He parkours the stairs, threatens her, then finishes by screaming that she should 'GO AHEAD AND STAAAARVE!!!'. Wow. Just wow."

My boyfriend choices growing up are really making sense now. Thank you Disney.

I've been trying to start an evening ritual because it's supposed to help you fall asleep. One piece of that for me is having a warm drink. Chamomile tea, golden milk or maybe this coffee-like yet caffeine free beverage. I love to add hawaij, a yemeni spice mix I found out about from Molly Yeh in her new cookbook. It's all the best warm spices, heavy on the cardamom and ginger. She also has the recipe on her blog for these coffee doughnuts. If you want to make it mocha-like, add a teaspoon or two of cacao powder. I used Dandy Blend to make this drink because it's delicious (roasted chicory and dandelion powder) but you can use just chicory powder if you like. Bonus: chicory is good for you and so is dandelion.

Chicory has a very similar flavour to coffee so feel free to add a spoonful to your regular coffee or latte for a more earthy flavour. New Orleans is familiar with this concept of adding chicory to coffee from their French influence (read more about it here). Cafe Du Monde serves a delicious cafe au lait with chicory to enjoy alongside their famous beignets (dipping is a must). And anything New Orleans loves, I love. It is one of my favourite cities in the entire world and they do all things with a sense of pride and authenticity.

makes one large mug or two small || time: 5 minutes

ingredients:

  • 2 cups almond milk
  • 1 heaping tablespoon Dandy Blend (you can substitute ground roasted chicory root and/or ground roasted dandelion root)
  • 1 teaspoon coconut oil
  • 1 teaspoon to tablespoon honey, depending on personal taste
  • 1/8 tsp natural vanilla extract
  • optional: generous pinch of hawaij if you have it or just ground cardamom + cinnamon would work
  • mocha variation: add 1-2 teaspoons raw cacao powder

method:

  1. Add all ingredients to a small pot and place over medium heat. Whisk vigorously to create frothy creaminess. Pour into mug when hot and sprinkle with extra spices.

Christmas time is baking time. I use a ton of flour and eggs and varieties of sugar and I make a minimum of three different cookies or it doesn't feel like Christmas. When I was growing up my mum and I would get our her box of recipe cards and go through and decide what we were going to make. Most were hand written recipes of my grandmother's which made them extra special. You could imagine the dozens of batches of squares or cookies made over the years by the little spotted stains and faded words on the cards. Almost every year included oatsies (an caramel-like oat base topped with chocolate), honeymoon squares (a shortbready bottom, gooey middle, topped with coconut, nuts and a maraschino cherry) and gingerbread houses. My mum and I are both big idea people. We love making plans and dreaming up amazing creations. Sometimes they turn out but often they don't or they morph into something different along the way. Most years we would pick an overly complicated gingerbread mansion or extravagant scene, and my mum would spend an obscene amount of time neatly cutting out all the pieces like the diligent lady she is. A bunch would end up being mis-shapened, others broken, and icing was everywhere you looked. They would always come together by the end but had transformed into something new (usually a dilapidated sort of barn-house structure with a faulty looking chimney). The best part was the decorating! We would get a ton of bulk candies and sprinkles and my mum, aunt, brother, sister, and I would decorate them. I always made trees from ice cream cones placed upside down covered in green sprinkles or frosting and a garden where I'd lay different coloured candies in rows like they were little cabbages and carrots. There was always at least one or more of us who would create a slightly morbid scene to add some flare and drama– a headless santa who had fallen off the roof, angry rabid reindeer, or santa hanging from a telephone wire. It was one of my favourite Christmas traditions.

These cookies are a reminder of those wonderful memories. They are reminiscent of something we would choose from the magic recipe box. Best dipped in some English tea, the chai spices are just enough to make you feel extra Christmasy and far less Grinchy.

makes approximately 40 2-inch round cookies || prep time: 40 minutes // rest time: 2 hours // bake time: 30 mins total

ingredients:

  • 188 g unbleached all-purpose flour (1 + 1/2 cups)
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp sea salt
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp cloves
  • 1/4 tsp all spice
  • 1/4 tsp black pepper
  • 3 tbsp unsalted butter, room temperature
  • 77 g dark brown sugar (1/3 cup packed)
  • 1 egg yolk
  • 1/4 cup honey
  • 1 tsp natural vanilla extract

method:

  1. In a medium bowl combine all dry ingredients (except the brown sugar) and whisk until mixed evenly.
  2. In bowl for stand mixer, add butter and brown sugar and fit paddle attachment (or use hand blender). Mix on high speed until creamy. Add egg yolk, vanilla and honey and mix until combined. Add flour mixture and mix on low until combined. Roll the dough into a large ball, cover in plastic wrap and press into a thick disk. Refrigerate for 2 hours minimum up to 2 days. 
  3. Preheat oven to 350°F. Lightly flour surface and roll out dough to 1/4" thick. Cut out cookies with cookie cutter (I used a 2-inch) and lay onto parchment lined baking sheet. Combine scraps of dough and roll out again, stamping new cookies. Bake for 7 minutes or until edges are golden brown. Remove and let cool on tray for a few minutes then move to cooling rack. Sprinkle with icing sugar when cool, if desired. Repeat until all cookies are baked or freeze extra dough if making less. 

Store in airtight container on counter or freeze for longer preservation.

Winter is here. There is snow on the ground, I bought a scarf that is basically a blanket, and my furry winter jacket has me nuzzling my face into it while out in the cold Toronto air. The other day I walked outside my door and watched an lady on the other side of the road do an unintentional Elaine dance before falling over on to the icy sidewalk. I held back a laugh and did my best surprised yet concerned person face, Are you okay?!" I asked loudly. She said nothing. MA'AM! ARE YOU OKAY?! DO YOU NEED HELP?!" I yelled, because then I was like, maybe she hit her head and is concussed! Yes yes, I'm fine.", she said clearly embarrassed and wishing I hadn't drawn attention to her. Oh, uhhhhh okay. Well, ummmmm, have a good day! Not that it was going good at this moment, but you know what I mean! Like I mean, I hope it gets better!" It was an awkward interaction. I felt bad she felt embarrassed but then I felt embarrassed for myself because of my weird response. But what was I supposed to do? Just watch and laugh and walk away? That's cold. Ice cold. Ha.

I made apple butter this week which makes these cold days easier. I turned the slow cooker on and basically just dumped everything in and left it for hours while it warmed up my apartment and spread Christmasy scents of cinnamon and nutmeg wafting around. I put on Christmas music and let the holiday feel fully set in.

This apple butter has no extra sweetener added since the apples themselves always lend enough sweetness in my opinion. It's a very easy recipe, takes no skill at all and makes a great holiday gift for your vegan paleo gluten–free lactose intolerant friend. Their life sounds depressing so they need this in a very big way. Also good for other people who eat all food. Might be okay for your cat, but I may be wrong as I'm just making this up right now. But a cat licking apple butter off a spoon would be super cute. You can use it on lots of things– spread on some toast, smothered on a pork chop, added to a cheese board, or dolloped into some yogurt or oatmeal. It's perfect just to eat right off the spoon as well. 

So pick out your favourite Christmas movie, put the tea kettle on, and pull out that dusty slow cooker that sits in the crawlspace underneath all the weird craft projects you started and never finished in the last year. I hope this apple butter makes you as happy as it did for me.

makes 3.5 to 4 cups of apple butter || prep time: 10 minutes // cook time: 6 hours

might like if you're into:      picking your own fruit, rolling hillsides,                                            cider, fermentation, bourbon, hot                                                      buttered rum, mulled wine.

the science

ingredients:

  • 4 lbs (10-12 medium) apples of your choice (I used Ambrosia)
  • 1/4 cup water
  • 1 tsp cinnamon
  • 2 tsp lemon juice
  • 1/2 tsp nutmeg, fresh grated
  • 1/2 tsp natural vanilla extract
  • 1/8 tsp ground cloves

method:

  1. Leave skins on; core and slice apples. Add apples and water to slow cooker and cook on high, covered. Leave for 3.5 to 4 hours stirring once in awhile. 
  2. Use potato masher or big wooden spoon to mash apples well. Blend up apple mixture using a hand blender, Vitamix or regular blender. Add the apple butter back into the slow cooker (unless hand blended) as well as the remaining ingredients and cook on high, uncovered for another 1 to 2 hours depending how thick you want it. Keep cooking longer to reduce down to whatever thickness you desire.
